Ingredients:
8 medium-large brown potatoes
1 large yellow onion
4 cloves crushed garlic
1 8oz. package of Italian cheese (parmasean,asiago,ramono)
2-3 tablespoons of margarine or butter
1/2lb of sour cream or emoe
salt and pepper to taste
Directions:
Cube potatoes with clean skins on. Put potatoes in covered casserole dish with the sliced onion and 1 tablespoon of margarine. Cook in Microwave until fork tender.Mash potatoes with crushed garlic. Add 1/2 lb sour cream or emoe. Whip with electric mixer. Add 1/2 of cheese blend.Add alittle milk if hard to whip.
Serve with remaining cheese mixture over the top of potatoes.
Heat before serving.
