Margarita Chicken in Ceaser Salad
ingredients:
Chicken:
2 cloves garlic
1 small chopped onion
2 chicken breasts
margarita mix (we use Sauza )
1 Tbsp Mrs. Dash
1 Tbsp Emerils essence
1Tbsp Ground pepper
1 ziplock baggy

Salad:
1 head Romain Lettuce
2 cloves minced garlic
1/4-1/2 can black olives
1/2 small purple onion sliced thin
Fresh Italian cheese
creamy Ceaser dressing (litehouse)

Directions:
Chicken:
take chicken and put into a ziplock baggie. Add Margarita mix, enough to cover the chicken.
Add  2 cloves of chopped garlic,  one onion chopped ( you can use 1/2 and onion if you want). Add in your seasonings, Mrs. Dash, ground pepper, and BAMM, Emeril's Essence. let it soak for an hour or more. you can either cook it on the grill or on  your george forman grill, you can even broil it, or fry it. However you like.
When its done, let it cool for a few minutes then slice into thin slices.



Salad:
wash Romain lettuce and break into pieces into bowl. Mince 2 garlic cloves and add to lettuce. slice purple onion thin ( you don't need to use all of the onion) add that along with sliced black olives. Next add fresh italian cheese. (you can use either the 6 cheeses  or the 3 cheese kind.) Toss with Ceaser dressing. Serve with warm chicken on top. MMMM what a meal. this would be good with  bread  dipped in olive oil, garlic and seasonings then grilled.

this makes a great meal for 2. if you have more people add more chicken and lettuce.
very simple and your guests will love it.
this tasted great with  white wine.
