Rice and Sausage
Ingredients:

1 package Sausage ( I used Hillshire)
2 cups white rice
2 cans black eye'd peas
1 1/2 cans chicken broth
1 onion, chopped
2 cloves garlic, chopped
season to taste: we used tobassco
otional:
1 small can of chopped green chilies

Directions:

Cook rice and set aside. heat about 2 tablespoons of olive oil in pan and saut'e onions, add garlic. Cut sausage to small bitesize pieces or smaller. Mix this in with onions and garlic. Cook until sausage looks like its done, stiring occasionally. Pour chicken broth into a pan and add rice. start warming. Add Sausage,onions and garlic mixture.Mix all together and let it get warm. If adding green chilies add when you put rice into broth. Season to taste. We added alittle tobassco, you might not need this if chilies are added.


Serves about 6 or saves to make great leftovers.
