Sopaipillas
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
2 Tablespoons shortening
3/4 cup warm water
Vegetable oil

Sift flour, salt and baking powder. Cut into shortening. Add water and knead. Add more flour if necessary. Roll on slightly floured board until 1/4 inch thick. Let stand to allow rising ( should only take a few minutes ). Cut into diamond-shaped pieces. Using a 1-quart saucepan with two inches of vegetable oil, fry dough in deep fat.( medium to medium-high ). turn at once to puff evenly and brown on both sides. Because they brown so quickly, cook one at a time.
Serve hot with butter and honey on the side.
