Ingredients:
1 Tbsp. oil
1 small onion, chopped
4 small boneless skinless chicken breast halves(one lb)
1 can cream of celery or cheese or chicken soup ( as long as its a cream of)
1 cup of your favorite chunky salsa
1 pkg frozen corn
1 can of black beans
1 small can of chilies chopped
2 cups instant brown rice, uncooked
1 bag of shredded cheese (cheddar or any kind you like)
Directions:
Heat oil in a large skillet on medium-high heat. saute' onion then add chicken; cover. Cook on both sides until cooked through.
Remove chicken from the skillet; cover to keep warm. Leave the onion in the skillet.
Add Salsa and creamy soup of your choice, corn, black beans, and chilies to skillet. mix and bring to a boil.
Stir in rice, reduce heat to low ;cover and simmer for about 5 minutes. Add chicken on top then cover with cheese. cover, and simmer for a few more minutes until rice is done and cheese is melted.
I add alot of cheese because I love cheese. you dont need to add the whole package.
Southwestern Chicken Skillet
